Summer Salads

I ate virtually nothing other than raw fruits and vegetables last weekend – I get so excited when my counters and fridge are overflowing! Zucchini, lettuce, watermelon, cantaloupe, honeydew, and nectarines are crowding my shelves and counters and I got to thinking about how to put them to work. In summer I rarely turn on the stove, if I can help it. Here’s some of my inspiration.

    I love these salads, especially the strawberry and avocado one. but they all look like they are delicious.

    Now I am really hungry. These all look so good except the watermelon salad because I am a weirdo who hates melons. 🙂

    Oh, you must make the strawberry, spinach and avocado salad, I used to make that for lunch at work, although it would usually keep it simple and involve feta, tomatoes & balsamic. yum yum yum.
    makes me wish it’s summer (it’s winter over here).
