    Those dishes all look so good!

    I always equate July 4th with Jello poke cake. The white box sheet cake with strawberry Jello seeping down it and a thick layer of Cool Whip was a favorite when I was a kid and is the only exception I'd make to my "no fake processed crappy food" rule.

    I thought I'd never eat it again when I gave up gelatin, but Whole Foods carries strawberry vegan "gel" powder, so I'm making my beloved cake after all.
